Camellia oleifera Zhongshan Camellia oleifera is one of the main specialties in Hezhou, Guangxi. "Zhongshan Camellia oleifera", as its name implies, is a special beverage made of oil and green tea. It was first popular in Honghua and Liang 'an, two ethnic minority towns in Zhongshan County. It is said that it is located in the high mountain area, which is relatively cool, and the drinking water is mountain spring water, which is cool. In order to drive away the cold, people use tea, ginger and garlic produced in the mountains to make camellia oleifera to drive away the cold. I didn't expect this kind of camellia oleifera to make you feel warm and refreshed after drinking, so it gradually spread. Now it has become a special drink in Zhongshan, and it is also a leisurely lifestyle for people.
Production method:
1. Heat the oil in the tea pot, add the prepared ginger, stir-fry while knocking, and stir-fry the ginger flavor (don't cook with a tea pot, don't use a pot head, and don't break the pot!
2. Add the prepared tea and stir-fry while knocking. Add some water in the middle, don't burn. After a while, add garlic and onion (or don't need these) and stir-fry the tea gum together.
3. Finally, add the broth (boiled water) and salt, boil and filter the residue, and the camellia oleifera will be ready. Put some chopped green onion, fried rice and give yourself favorite snacks when drinking.
4. Heat the pot again, add oil, put the tea residue filtered last time into the pot, add the raw materials of step 1 ~ 3 again, and operate again, and so on until it is satisfactory.
2. Fenjiao Fenjiao, also known as Sanjiaobao, is a traditional Han snack in the area under the jurisdiction of Nanhai County (now south of China) and the Pearl River Basin. The real development of Fenjiao is in Babu, Hejie, Xindu and Zhongshan (the area under the jurisdiction of Nanhai County in Han Dynasty) in Hejiang River Basin (Guidong).
The fillings in jiaozi are mainly composed of pork, mung beans, cold potatoes, carrots and fungus. The method is simple. First steam the cold noodles outside the triangle bag, then chop the ingredients in the stuffing into the final shape, and wrap the stuffing with cold noodles to make a triangle. Although the production process is simple, the key lies in the production of cold rice noodles. People who often eat vermicelli jiaozi may know that if the cold noodles on the outer layer of vermicelli jiaozi are not well made, the stuffing inside will easily disperse and the taste will be bad.
3. Daduba Daduba is a famous local snack. As the name implies, it is plump. The skin is made of glutinous rice and four seasons leaves, and the inside is stuffing. As a local, I drool every time I think about it. Production method: Wash and soak glutinous rice, add fresh pomegranate leaves or Hollyleaf and grind into powder, knead the powder into balls with hot water, knead the balls into concave shapes repeatedly, put the prepared stuffing into the concave, and then knead into round rice cakes. Cook in a boiling pot, put the fish in a bowl and serve it out with hot soup. You can choose the stuffing you like.
