The production process flow chart of Pu 'er tea is as follows:

1. Picking Pu 'er tea leaves

The picking of simple Pu 'er tea is also very particular. Grasp the 1-3 tea bud gently with the index finger and thumb of the right hand, then carefully pick it from the Pu 'er tea tree and put it into the tea picking tool.

Note: fresh leaves must be picked. The national standard for fresh leaves refers to 1 bud 2 pieces and 1 bud 2 pieces. 5 to 70% of the points are called 1 grade. Generally, 2 to 3 leaves in 1 bud are better.

Second, spread the Pu 'er tea leaves to dry.

Pu 'er tea trees, especially ancient Pu 'er tea trees, generally grow in virgin forests and deep forests in Yunnan, and will bring some dew when picking, especially when it rains.

Therefore, after picking, the first thing to do is to spread the picked fresh leaves in a ventilated and dry place, so that the dew and moisture in them can be dried and evaporated, and the moisture can be reduced to at least 40% of the original.

Another advantage is that in the process of water evaporation, the aroma of fresh leaves of Pu 'er tea will gradually form, and a part of macromolecular ester-soluble sugar water will be decomposed into small molecular soluble sugar.

Third, stir-fry Pu 'er tea leaves.

After evaporating the water to a certain proportion, stir-fry the Pu 'er tea leaves. The technical term in the industry is fixing, that is, putting the dried Pu 'er tea leaves into a pot at 200 degrees Celsius, and constantly stirring with tools for more than 300 seconds.
