Formula and making method of Su-style moon cake

Preparation materials: flour160g, sugar10g, lard100g, water 70g, matcha powder 5g, low-gluten flour120g, white kidney bean stuffing 250g and red bean paste stuffing 250g.

1. Mix the oil skins (common flour 160g, sugar 10g, lard 50g, clean water 70g, and matcha powder 5g) and knead them into smooth dough, and relax for about 30 minutes.

2. Mix and knead the pastry materials (low-gluten flour 120g, 50g lard) into smooth dough, and relax for about 30 minutes.

3. Divide the oil dough into 2 parts, take 1 part, add matcha powder and knead evenly.

4. Divide the oil skin and pastry evenly into 20 parts and knead them into a circle (about 8g/ pastry, 15g/ pastry).

5. Take a dough and flatten it with your palm, and put a dough on the dough.

6. Wrap the pastry with dough, with the sealing of the dough facing down, and complete the rest of the dough according to this step.

Seven, then use the prepared rolling pin to roll the dough into oval dough, as shown in the figure below.

Eight, then roll up the dough from the outside to the inside, with the closing position facing down, as shown in the figure below.

Nine, after the dough is all done, cover it with plastic wrap and relax for about 20 minutes. Repeat this step, continue to roll the dough into an oval shape, then roll it again and relax for about 20 minutes.

10. When the dough relaxes for the second time, prepare the stuffing, and divide the prepared stuffing into 20 portions (25g/ portion) on average.

Eleven, take one of the small dough, two sides to the middle in half, press by hand, roll into a circle, and put 1 stuffing in the middle.

12. Then wrap the leather bag, pinch it tightly with your hands, and the convergent position is downward, as shown in the following figure.

13. Brush a layer of egg yolk liquid on the original moon cake, sprinkle a little white sesame seeds, put it in a preheated oven, and bake it in the middle and upper layers for about 25 minutes.

Bake for 25 minutes and then take out the oven, so that the Su-style moon cakes are ready.
