Brief introduction of almond tofu
The main raw material is sweet almond, which is ground into pulp, boiled, frozen and cut into pieces. Named after the shape of tofu. However, due to different producing areas, the production methods of almond tofu are also different. Almond is the kernel of almond fruit, containing 20% protein and no starch. Almonds (whether bitter or sweet) should be soaked in clear water for many times and boiled before they can be eaten.
Traditionally, almonds are cooked, concentrated and cut into pieces. They look like tofu, tender and smooth, and taste sweet and mellow, but they have nothing to do with tofu. It is said that the ancient Romans gave almonds as gifts to dignitaries. King Tutankhamun, the owner of the Sphinx in ancient Egypt, hoped that people would bring some almonds to accompany him on his journey to heaven.
Method for making almond bean curd
Ingredients: 50g almond, 200ml milk, 5g agar, 30g rock sugar, 400ml water, proper amount of honey and osmanthus fragrans.
1. Soak almonds in warm water for half a day, and then peel them.
2. Wash the peeled almonds and put them in a blender. Add 200ml of water and beat them into almond paste.
3. Take a clean gauze and spread it on a big bowl. Pour almond paste into gauze and filter.
4. Put the agar into a bowl and soak it in 200ml of water until it becomes soft.
5. Pour the soft agar and water into the pot and heat it on low heat.
6. After the agar is boiled, pour in almond water and milk and continue heating for a while.
7. Add rock sugar and cook until the rock sugar dissolves.
8. Pour the boiled almond milk into a flat-bottomed container, cool it, cover it, and put it in the refrigerator until it is solidified.
9. When eating, cut into small pieces, pour a little osmanthus, or pour some juice, honey or some fruit.
