Songpan Pork (a traditional Chinese cured and smoked meat product)

Pine Plank Pork is a traditional Chinese cured and smoked meat product made with pork as the main ingredient in a multi-step process. It gets its name from the pine boards used in its preparation, which allow the pine board meat to absorb the aroma of the pine wood during the smoking process, making its flavor more unique. Pine board meat is not only tasty, but also rich in protein and nutrients, making it a very healthy food.

Steps to make pine board meat

1. Prepare raw materials

The main raw material for pine board meat is pork, preferably pork with a comparable ratio of lean meat to fat meat. In addition, some seasonings, such as salt, sugar, soy sauce, cooking wine, ginger, garlic and so on.

2. Cutting and marinating

Slice the pork into long strips of about 2 centimeters in thickness, and marinate it in seasonings such as salt, sugar, soy sauce, cooking wine, ginger, and garlic for 3-4 hours, so that the seasonings can fully penetrate into the meat.

3. Smoking

Put the marinated pork on a pine board and smoke it over charcoal for 2-3 days to allow the meat to absorb the aroma of the pine while smoking it for a unique texture and flavor.

4. Drying

After smoking, the pine board meat needs to be dried so that its moisture can gradually evaporate and it becomes firmer and more resistant to storage.

5. Packaging

Pack the dried meat in plastic wrap or paper bags and store in a cool, dry place, refrigerated or frozen.
