Types of chymosin

There are three states of chymosin: liquid, powder and tablet. Traditionally, chymosin was extracted from abomasum of calf's fourth stomach. With the development of chymosin research, its source is expanding. Now it includes three types: animal chymosin, which comes from cow's stomach, pig's stomach and sheep's stomach; Plant chymosin is derived from fig juice and pineapple fruit; Microbial chymosin comes from mold and yeast. Chymosin from mold is widely used in Danish cheese production.
