Cinnamon Fish with Pine Nuts (a traditional Jiangnan dish)
The Jiangnan region is known as the "land of fish and rice" and has been rich in aquatic resources since ancient times. The osmanthus fish is one of the most famous fish in the south of the Yangtze River, and osmanthus fish with pine nuts is a classic way of preparing osmanthus fish, which is famous for its delicious taste and rich flavor.

Steps in detail
1. Preparation
Slaughter the cinnamon fish, remove the viscera, wash and drain the water. Toast the pine nuts and gently crack them with a knife, set aside.
2. Marinate the fish
Mix the marinade well and spread it on the surface and inside of the guppies, marinate for about 20 minutes to flavor the fish.
3. Pan-fry the fish

Pour the oil out of the pan, put in the appropriate amount of water, add chopped green onion, ginger, cooking wine, salt, soy sauce, dark soy sauce, sugar, chicken essence, bring to a boil, then turn down the heat, cook until the soup is thick, and pour it on top of the pan-fried osmanthus fish.
5. Sprinkle pine nuts
Pour the cooked sauce evenly over the cinnamon fish and sprinkle with toasted chopped pine nuts.
Eating Methods
Pine nut guppy has a tangy and flavorful taste with tender meat, which is enriched with the aroma of pine nuts. To serve, cut the cinnamon fish into chunks and serve with rice, or enjoy it as a dish on its own.
