What microorganisms are found in wine malt?
Malteseed is made from wheat and is a relatively important saccharifying agent for yellow wine production. It provides various enzymes, mainly amylase and protease, for yellow wine brewing. The main microorganisms are Aspergillus flavus (or Aspergillus oryzae), Rhizoctonia solani, Trichoderma reesei and a small amount of Aspergillus niger, Aspergillus grey-green, Penicillium, yeasts and so on.
Beer fermentation is the use of yeast;
Fermented meat products the main microorganisms are lactic acid bacteria, schizococcus, molds and so on.
The fermentation of yellow wine utilizes Trichoderma, Rhizopus, and yeast;
Soy sauce production utilizes Aspergillus oryzae, Saccharomyces cerevisiae, and Lactobacillus;
Vinegar production is mainly the result of Acetobacter spp.
