Method for making stinky tofu dipping sauce

Ingredients of homemade healthy stinky tofu and secret dipping sauce

Old tofu 1 3 tbsp soy sauce

Half a teaspoon of sugar chicken essence 1 teaspoon

2 tablespoons Chili oil and 1 tablespoon garlic Chili sauce.

1 coriander and 1 chives.

Step 1

Wrap the plate with plastic wrap to prevent oil on the plate (once there is oil, it will not ferment), and put the washed tofu in the plate wrapped with plastic wrap.

Second step

Wrap the cutting board with plastic wrap and press it on the tofu. Press a bowl of water on the chopping block. Press the water out of the tofu. Pour water once every half hour, four times.

Third step

After pressing the water dry, cut the tofu into pieces.

Fourth step

Put the cut tofu neatly in the box, leaving a gap for each piece of tofu to facilitate fermentation.

Step five

Wrap it in tin foil, not too tight. Tofu is fermented in the shade for three days, and the tin foil is opened once a day to change the air. There will be mucus on tofu in three days. If the temperature is high enough, there will be yellow hair, which means that the fermentation is successful, but if there are black spots on the tofu, it means that the fermentation has failed and should be thrown away.

Step 6

After three days, wash the fermented tofu and fry it in the oil pan until crisp and golden. Self-fermented tofu is not as smelly as the one bought outside, but it tastes crisp, fragrant and healthy!

Step 7

Secret dipping sauce: three scoops of soy sauce, one scoop of sugar, one scoop of coriander, one scoop of chives, one scoop of Chili oil, one scoop of garlic Chili sauce and one scoop of chicken essence.
