According to legend, as early as the Northern Song Dynasty, Hefei produced a kind of solid cake shaped like copper coins, named "money cake", which was delicious. At the end of Yuan Dynasty, when Zhu Yuanzhang rose up against Yuan Dynasty, Zhang Desheng, a native of Hefei, was taken as a pioneer by Zhu Ren. In order to prepare dry food, Zhang went to Hefei to make a big "money cake", called hemp cake, to pay for the water army. Therefore, the morale was greatly boosted, the Yuan army was defeated, and the natural barrier of quarrying was seized. Zhu heard the news and called it "victory cake". After Zhang's death, posthumous title Cai Guogong was also called "Cai Guogong Cake".
Hemp cake is an authentic Sichuan dish with a long history. manufacturing method
1. tanning material: maltose should not be too thick, and the temperature should be around 35℃ ("bifurcation" by hand inspection). After maltose and sesame oil are mixed, the flour below is mixed with soda ash. According to the degree of dryness and wetness of flour, water can be added appropriately, generally around 1 kg. After adding water, stir for 5 ~ 6 minutes, fold it gently by hand, and then peel it.
2. Core-making material: firstly, add all kinds of flowers and fruits, Sichuan sugar, salt and pepper powder, then add sesame oil, and finally add caramel and cooked powder, and stir evenly. It is not advisable to stir more, so as not to make the flowers and fruits paste.
3. Molding: the core is covered according to the proportion of 40% skin and 60% heart. It is molded with a special iron ring, and then it is made of hemp. The beating of the cake surface should be uniform, and the hemp grains should not overlap; Only put a little sesame seeds on the bottom, and you can't stick hemp grains on the waist of the cake. Bake after beating hemp.
4. Baking: use fast fire, the furnace temperature is about 350℃. When entering the furnace, bake the cake face down for about 1 min, turn it over and bake for about 1 min. When the sesame seeds split, you can take it out.
Features: round and blocky, full and flat, evenly beaten, and the surface is undoubtedly caked with sugar.
Color: brown surface, light yellow edge, yellow bottom, no focal spot.
Structure: thin skin and many cores, clear outline and no impurities.
Taste: Sweet and salty, delicious, with a special flavor.
