Eight Traditional Cuisine and "Representative Cuisine" in China
Shandong cuisine is the first of the eight major cuisines, which originated in Boshan District, Zibo City, Shandong Province. Representative dishes include Jiuzhuan large intestine, stir-fried kidney flower, sweet and sour carp, sea cucumber with scallion, fried chicken, braised chicken in Four Joy Meetballs and Dezhou, and braised prawns.
Sichuan cuisine is famous for its spicy, fishy and homely flavor. Representative dishes include Mapo Tofu, Sichuan-style pork, husband and wife lung slices, boiled beef, Maoxuewang, kung pao chicken, shredded pork with fish sauce and so on.

Jiangsu cuisine is represented by Huaiyang cuisine, including sweet and sour mandarin fish, salted duck, crab powder lion head, Nanjing salted duck, Zhenjiang crystal meat and so on.
Zhejiang cuisine originated in Zhejiang, and its representative dishes include West Lake vinegar fish, Dongpo meat, West Lake water shield soup, Longjing shrimp and so on.
Hunan cuisine originated in Hunan province, and its representative dishes include fish head with chopped pepper, fried meat with chopped pepper, and sugar and oil Baba.
Anhui cuisine originated in Anhui Province, and its representative dishes include braised paddle, stewed pigeon in Huangshan Mountain and Huizhou Yipin Pot.
