On July 14, Huzhou Teachers College's summer social practice investigation team visited the canal culture in Huzhou and Fuzhen and interviewed Secretary Zhang Jincai. Students have a deeper understanding of local food in Digang, and also interviewed Zhang Xiaolin, a pastry chef in Digang Fish Village, to experience the inheritance and innovation.
Secretary Zhang Jincai said that Digang is a place rich in fishery resources, so the famous dishes here are all related to fish: fish balls, fish cakes, shredded eel, stone pot mandarin fish ... These traditional dishes are based on this land, benefiting from rich fishery resources, and have become people's snacks to great delicacies. However, the wastewater brought by the rapid development of industry has repeatedly caused a large number of fish deaths in fish ponds, and even destroyed the nature and living environment, which is distressing. Although this is an era of rapid development, we should not sacrifice the natural environment for the sake of development speed. We should know that "clear water and lush mountains are priceless assets". Secretary Zhang Jincai also told the story of the founder of Chen Jiacai, a famous local cuisine. As the personal chef of Chen's father-in-law, Zhu Wulou, he loves this land and didn't board the plane to Taiwan Province. Chen Jiacai is also thriving here. This feeling of loving hometown and motherland is worth learning by future generations.
The interview with Master Zhang not only made us understand the practices of local specialty cakes, but also triggered our thinking on inheritance and innovation. He said that as he grew up, he found that childhood food had lost its childhood flavor with the changes of the times, so he chose to become a pastry chef and pass on the memory of cakes to future generations. He not only inherited the classic pastry practice, but also combined with the local mulberry culture to innovate a variety of mulberry food. We need inheritance, but blind inheritance can only be a porter, but not a craftsman. With firm inheritance and unremitting innovation, Master Zhang has brought us the best demonstration.
