Which is better, the mustard tuber produced in Fuling, Chongqing or Yuyao, Zhejiang?

Fuling mustard tuber, Chongqing specialty, Chinese geographical indication certification trademark. Fuling mustard tuber is a fresh, tender and crisp flavor product made from the head of green vegetables planted in Fuling District of Chongqing under special soil and climate conditions through unique processing technology.

It, together with French pickled cucumber and German sweet and sour cabbage, is known as the three famous pickles in the world, and it is also one of the three famous vegetables (mustard tuber, Osmunda japonica and bamboo shoots) exported by China. Its traditional production techniques were included in the second batch of national intangible cultural heritage list.

I was born in Fuling, and I have great feelings for Fuling mustard tuber and know it better. The peak of the development of traditional Fuling mustard tuber was in the 1970s, when there were no fewer than 20 state-owned mustard tuber factories in Fuling County, which were located 30 kilometers along the Yangtze River. Every winter, as an important source of income, local people grow vegetable heads in every household.

Except for a few pickles made by ourselves, they are sold to pickles factory at the price of 2 13 cents per catty. Every state-owned pickle factory has built many air-dried vegetable racks along the Yangtze River. The shelf consists of two logs fixed in series at the top, and the top is fixed on the ground with thick hemp rope. They stood on the beach by the river, with a distance of 7. 18 meters from left to right, and layers of bamboo ropes were wound between logs from top to bottom. The herringbone frame is 5.16m high.

The mustard tuber factory employs local people for processing: firstly, the purchased green vegetable heads are stripped of old tendons, and the big ones are divided into two parts, strung with 2-meter-long bamboo filaments, and each string is paid 1 minute, and put on a shelf for air drying (river flow drives airflow, referred to as river wind).

After 50-60% water is removed in about 20 days, the silk frame is put into the pool for pickling and fermentation for one month, and then the second dehydration is carried out.

Then take out about 20% of the water, take out and hire someone to remove the tendons, put the red fine powder Chili noodles into a jar for compaction, seal them with cement for secondary fermentation for three months, and then export them for consumption. In order to obtain better flavor, some jars are directly submerged in water and fermented and preserved in a natural and stable low temperature environment for a long time.

Every local company also makes it by itself, so the sales volume is not much, and most of them are sold abroad by river boats all over the country or exported abroad. The flooded salt water is very precious. Zhacai soy sauce boiled with ginger, pepper, aniseed, dried tangerine peel, cinnamon and other seasonings is incomparable to top soy sauce. At present, due to the simplification of production technology, pure pickled mustard tuber soy sauce has almost disappeared.

In 1980s, with the reform and opening up and the introduction of market economy, state-owned mustard tuber factories were successively acquired or closed down by private enterprises, and private mustard tuber factories blossomed everywhere. Zhejiang, which has a strong sense of coastal market economy, has also come to grab this cake. Taking advantage of the unique geographical and climatic conditions on both sides of Fuling, it was transported to Yuyao, Zhejiang Province for processing mustard tuber, and Zhejiang mustard tuber was born. In order to reduce costs and maximize profits, they simplified the process. The core process, which are time-consuming, laborious and expensive, are air drying and dehydration, direct salting and dehydration, and then chopped and sold together with perfume additives in small packages. This mustard tuber has no natural fresh fragrance and sour taste, and is no different from ordinary pickles. So, I put quotation marks on it in Zhejiang.

The ten-year struggle between Chongqing and Zhejiang for the small head of vegetables led to the dispute between Chongqing and Zhejiang in 10. Chongqing Fuling and Zhejiang Yuyao are two major brands in the domestic mustard tuber market. From 65438 to 0995, China Agricultural Society and other departments jointly held the activity of "Publicity on the Development and Construction of Hometown with Special Products". Fujian mustard tuber and Zhejiang mustard tuber both began to compete for the title of "the hometown of mustard tuber in China".

1998, Fuling mustard tuber applied to the Trademark Office of the State Administration for Industry and Commerce for trademark registration, and obtained a trademark registration certificate, valid from April 26, 2000 to April 20, 2006. Fuling mustard tuber has successfully obtained the right to enjoy the protection of origin, raw materials, manufacturing methods, quality and commodity trademarks. With this trump card, Fuling mustard tuber occupies more than 70% of the domestic mustard tuber market at a price 20% higher than the market.

In August, 2003, Yuyao, Zhejiang Province took the opportunity to apply for the origin mark, and once again provoked the competition between the two places about the origin of mustard tuber. In early September, the General Administration of Quality Supervision, Inspection and Quarantine (AQSIQ) announced that Zhejiang Yuyao mustard tuber had applied to the State Quality Supervision Bureau for origin protection, and the publicity began for three months through formal examination and on-site examination.

Yuyao's preemptive strike made Fuling unable to sit still. At the beginning of September, 2003, Fuling applied to AQSIQ for origin protection, which was accepted by the state, and went to Chongqing for field investigation in June, 2003.

It is reported that although Zhejiang claims that the planting area of Yuyao mustard tuber is 65.438+10,000 mu and the annual output is 500 million kilograms, the annual processing output value is 65.438+0 billion yuan. However, Fuling said in the objection that the climate and soil in Zhejiang are increasingly unsuitable for the growth of mustard tuber raw materials, and its producers often go to Fuling to purchase raw materials. It is conservatively estimated that at least 6.5438+0.5 million tons of vegetables produced in Chongqing flow to Zhejiang every year. At the same time, Yuyao changed to salt dehydration process to make products (Fuling is air drying process), and the production cycle is too short, only a few months. , does not meet the standard of origin.

Fuling mustard tuber expands the market and exports. In the future, all WTO members will conduct random inspection of imported "Fuling mustard tuber" according to this standard.

Whether Chongqing Fuling mustard tuber or Zhejiang Yuyao mustard tuber, as long as China mustard tuber goes abroad and wins honor for our country, it is a good mustard tuber!
