They can see the mystery, but they have to pretend they can't see it and show their surprise. What we see in front of TV is the picture after post-production and lens processing, of course, we can't see the magical mystery. Therefore, this kind of magic is also called "total protection magic", which is not so much magic as visual stunt performance.
