Jimo Old Wine is a sweet yellow wine with a clear and transparent dark brownish-red color, a strong aroma of burnt corn, and a mellow taste with burnt bitterness and an unceasing aftertaste. Jimo Old Wine is brewed with high quality corn and rhubarb rice as raw materials, Chenfu wheat quartz as fermentation agent, and Laoshan spring water, applying traditional craftsmanship. Jimo old wine is called "mash wine", is the national quality wine, Shandong famous brand products, mainly produced in the county. According to the Records of Jimo County and relevant historical data: in 722 BC, the Jimo area including Laoshan was already a populous and productive place. Here the land is fertile, corn is highly productive, the rice grain is large, smooth and moist, which is the superior raw material for brewing yellow wine. At that time, yellow wine was extremely popular as a kind of sacrificial offerings and cheering drinks, and also for this reason, the brewing of yellow sprinkles reached its heyday. In ancient times, local officials treated "mash wine" as a precious commodity and paid tribute to the royal family. According to legend, during the Spring and Autumn Period, Qi Jinggong, the ruler of Qi, made a pilgrimage to the Laoshan Fairyland, which was called "Immortal Wine"; during the Warring States Period, the Qi general Tian Shan skillfully set up the "Fire Ox Formation" and broke the Yan army, which was called "Ox Wine"; Emperor Qin Shi Huang went to Laoshan for the immortality of the people. Laoshan, Qin Shi Huang went to the east for immortality medicine, called "life wine"; several generations of kings to drink this wine, called the "precious syrup". In the middle of the Tang Dynasty, it was found that "mash wine" had the effect of adapting the muscles and bones into the bone marrow, so it was also called "skeleton wine". In the Song Dynasty, in order to distinguish the long history, good brewing, and high value of "Mash Wine" from the wine of other regions, so as to facilitate trade, the name "Mash Wine" was changed to "Jimo Laojiu (old wine)". "The name has been used ever since. This name is still used today. In 1950, "Shandong Province Jimo Yellow Wine Factory" was built, which further developed the famous "Jimo Old Wine". In 1985, the annual output reached 1,000 tons, and in 1963 and 1979, in the second and third National Wine Evaluation Conference, it was rated as the national high-quality wine, and was awarded the silver medal.01 In 1984, in the Ministry of Light Industry's Wine Quality Competition, it was awarded the Golden Cup Prize.01 2006, the Brussels International Wine Evaluation Association (IWEA), one of the world's three major wine evaluation associations, evaluated the Chinese yellow wines, and the Jimo Old Wine was awarded the only gold medal.
