Introduction to Food Festival I sent an email to my pen pal introducing two favorite dishes.

Technology, especially my mother, a good cook, has many dishes I like to eat. Among them, my favorite dish is braised fish.

Today, her mother cooked my favorite braised fish. I witnessed the process of mother fish washing fish.

Mother prepares the materials first: carp, onion, ginger, garlic, sugar, soy sauce, coriander, rice wine, salt, cooking oil and green pepper.

These materials are ready, and mother begins to wash the fish. She sawed off the scales with a knife, then removed the gills, left the fish bubbles in her stomach, punctured the fish bubbles, removed all the black debris from the maw of the fish, washed the fish, and evenly marked the fish.

Mom heats the pot. When a little oil is poured into the smoking pot, coat the pot with oil, then add a little cooking oil. After frying, wash the pot, add fish, then add some rice wine, so as to remove the smell of fish, add a teaspoon of sugar and a little soy sauce. Fish can be one color, then start to add cold water, let the fish drown in the water, add onion, ginger, garlic, pepper and salt, then after the fire boils, turn down the heat, cook for 40 minutes, add coriander, and finally, a pot of delicious braised fish is cooked under the care of mother.

I am salivating at the smell. I quickly picked up chopsticks and dipped in a sip of juice. Oh, how nice! It's fragrant, soft and slippery, and it's such a delicious dish!
