Introduction of small rice vinegar
Small rice vinegar is a traditional Chinese specialty of Qingxu County, Shanxi Province. Vinegar brewed with millet as raw material, the originator and the first creation of millet vinegar is Jin millet vinegar. After liberation, it has been standardized production, and the production of categories have been improved in large scale, with its "light color, mellow fragrance, nutrition and health" features listed among the three major vinegars in China (Shanxi sorghum vinegar, Zhenjiang rice vinegar, gold millet vinegar), and it is famous in the world with its unique flavor because of its unique brewing technology and orderly inheritance and long history technology. The raw material production process is different from both Shanxi sorghum aged vinegar and Zhenjiang rice vinegar.
