Hot Noodles (a traditional Chinese noodle processing method)

What is hot noodle?

Hot noodle is a traditional Chinese noodle processing method, which involves blanching the flour with hot or boiling water before rolling, kneading, and rolling out to create a variety of delicious noodle dishes. Hot noodles are characterized by a soft, elastic dough and a delicate, smooth texture, and the process is simple and easy to make, requiring few tools and skills, making them ideal for home making.

Hot Noodles Steps

Preparation

First of all, we need to prepare flour, hot or boiling water, basin, rolling pin, cutting board and other tools. The choice of flour can be decided according to your own preferences and needs. Generally speaking, high-gluten flour is suitable for making noodles, steamed buns, dumplings and other pasta that need a glutenous texture, while low-gluten flour is suitable for making wontons, buns, mooncakes and other pasta that need a soft texture.

Scalded Noodles

Pour the flour into a pasta pot and gradually add hot or boiling water, stirring with chopsticks or a spoon as you add the water until the flour turns into a ball. Then knead the dough with your hands until the surface is smooth and elastic. When kneading, you can stretch and round the dough repeatedly, which can enhance the softness and toughness of the dough.

Resting

Place the kneaded dough into a bowl, cover with plastic wrap or a damp cloth, and let the dough rest for 20-30 minutes to allow it to fully rest and the water to fully penetrate into the flour, improving the dough's softness and extensibility.

Rolling Out

Remove the rested dough, place it on a cutting board, and use a rolling pin to roll the dough into a thin sheet. When rolling out the dough, you can divide the dough into several portions and roll each portion into a thin sheet to make it easier to handle.

Cutting

Cut the rolled out dough into strips or other shapes, depending on your needs and preferences. To cut the noodles, you can use a knife to cut, a pasta cutter, or other tools.
