How to make moldy tofu

Materials for making moldy tofu:

The production process of moldy tofu;

Step 1: Cut the bought tofu into pieces and put it in the prepared container. If there is no such box made of bamboo sticks, you can also put these tofu blocks in large containers such as iron plates and iron frames.

Step 2: Cover the tofu block with clean plastic film. The purpose of this is to prevent dust from falling on the tofu block.

The third step: natural fermentation, usually five to seven days, tofu blocks grow long hair, don't worry, open the plastic film and prepare to clean the glass bottle without water.

Step 4: Put on gloves, put the tofu pieces into glass bottles one by one, sprinkle with salt, pepper (Chili powder is also acceptable) and cooking wine, and marinate for half a month to one month.

After half a month or a month, the moldy tofu has been marinated and can be opened for eating. If you are in a hurry to eat, you can marinate for half a month, but half a month is not enough. At this time, the wine is still strong, and the moldy tofu is not salty enough. It is recommended to marinate for one month, which is the most suitable.

When making this moldy tofu, the choice of cooking wine is more important. Cooking wine has the function of sterilization and fragrance enhancement. Generally, it is better to make cooking wine by yourself. If you go out to buy wine, it's best to be around 55 degrees. Too low a concentration is not good, tasteless, too thick is not good. The concentration of wine will spoil the taste of moldy tofu and affect the taste.

In addition, the production of moldy tofu also pays attention to the season. It has a fermentation process. If it is homemade at home, it usually depends on natural fermentation, so choose a season with relatively high temperature, such as July and August every year. At this time, the indoor and outdoor temperatures are relatively high, which is more suitable for making moldy tofu. If you choose other seasons, such as spring or winter, it will be more difficult to do well, because the temperature is not high enough and the fermentation is not successful. Therefore, it is recommended to make moldy tofu in July and August.
