1. Clean and remove impurities. Choose white glutinous rice, remove impurities such as sand and gravel, and rinse it repeatedly with clear water.
Soak. Put the washed rice into the soaking pool and soak it in clean water 12 ~ 24 hours. When rice grains swell, the water content is 35% ~ 40%.
Grinding. The soaked rice can be poured into the hopper of the pulverizer, and the wet rice can be ground into wet rice flour when the machine is turned on.
4. Knead the noodles. The purpose of kneading dough is to make the viscosity of rice flour uniform, and at the same time, sieve to remove caking, so as to ensure the uniform texture of the molded rice cake.
5. Ingredients. Before the mold is formed, the auxiliary materials are added into the rice flour and stirred evenly. The formula can also be adjusted according to local tastes. When the rice cake needs to be colored, brown sugar can be used as a sweetener.
6. Steam. Fermented rice cakes should be fermented for 30 minutes before steaming. Steam the pressed rice cakes in a steamer for 25 minutes.
